Description

Tortellini Caprese Salad is a delightful twist on the classic Italian dish, perfect for any season. This vibrant salad combines cheese tortellini, fresh basil, and juicy cherry tomatoes, all drizzled with a zesty balsamic glaze.


Ingredients

  • 20 oz cheese tortellini
  • 10 oz cherry tomatoes, halved
  • 8 oz mozzarella pearls
  • 1 cup chopped spinach
  • 1/4 cup chopped basil
  • 1/2 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 34 garlic cloves, minced

Instructions

  1. Cook the tortellini in a large pot of boiling salted water according to package instructions until al dente. Drain using a colander and rinse briefly with cold water.
  2. While the tortellini cooks, prepare the spinach, halve the tomatoes, and mince the garlic.
  3. In a mixing bowl, combine the cooled tortellini, spinach, tomatoes, mozzarella pearls, basil, and garlic.
  4. Drizzle with olive oil and balsamic vinegar; season with Italian seasoning, salt, and pepper. Toss well to combine.
