- 20 oz cheese tortellini
- 10 oz cherry tomatoes, halved
- 8 oz mozzarella pearls
- 1 cup chopped spinach
- 1/4 cup chopped basil
- 1/2 cup olive oil
- 2 tablespoons balsamic vinegar
- 3–4 garlic cloves, minced
Instructions
- Cook the tortellini in a large pot of boiling salted water according to package instructions until al dente. Drain using a colander and rinse briefly with cold water.
- While the tortellini cooks, prepare the spinach, halve the tomatoes, and mince the garlic.
- In a mixing bowl, combine the cooled tortellini, spinach, tomatoes, mozzarella pearls, basil, and garlic.
- Drizzle with olive oil and balsamic vinegar; season with Italian seasoning, salt, and pepper. Toss well to combine.
- Chill in the refrigerator before serving to allow flavors to meld.
